Can we start with one branch?

Yes. The workflow is already modeled around individual cafe records, so one branch can go live first and expand later.

Do guests need accounts?

No. The public journey keeps guest checkout friction-light, just like the source order workflow we ported.

Will billing be recurring?

That is the target direction. The current build already prepares hosted payment and webhook logic for MetaV subscriptions.
